Why serving Arabic coffee is an important aspect of Arabian Culture

Coffee is one of the oldest drinks ever known in the Middle East and is particularly popular with the Bedouins. Coffee drinking is associated with socializing and conversation and forms an integral part of the culture and traditions of this region. Serving Arabic coffee is an important part of hospitality in Arab societies and is a tradition that dates back many centuries ago, and it’s considered to be a ceremonial act of generosity and hospitality. Preparing and drinking Arabic coffee is classified within social practices, rituals and festive events, it is also related to traditional crafts, as there is a set of tools for coffee that can be decorated such as the coffee pot, coffee cups, and the coffee preparation tools.

كيفية إعداد القهوة العربية

القهوة العربية مصطلح عام يشير إلى طريقة إعداد القهوة في العديد من البلدان العربية في جميع أنحاء الشرق الأوسط. ومع ذلك، هناك قدر كبير من الاختلاف من بلد إلى آخر، بما في ذلك كيفية تحميص القهوة وما هي التوابل والنكهات المضافة. إلا أنه وفي الغالب يتم إعداد القهوة العربية على الموقد في وعاء خاص يدعى دله، يسكب في الترمس، ويقدم في كوب صغير الحجم يدعى “الفنجان”. يتناول المقال الحالي مكونات القهوة العربية فضلاً عن أكثر الطرق الشائعة لإعدادها.

كيفية إعداد القهوة العربية
القهوة العربية التقليدية، مع جذورها في التقاليد البدوية، عادة ما تكون غير محلاة، ولكن يمكن أن يضاف إليها السكر حسب تفضيل الشارب. ومع ذلك، فإن هذه القهوة ليست شرابًا حلوًا أبدًا، ولكنها مشروب قوي ومر في الغالب. وللتعويض عن النكهة المرة، تجري العادات العربية بتقديم القهوة مع شيء حلو (مثل التمور) ويتم تقديم الحلويات الأخرى في كثير من الأحيان جنبا إلى جنب مع فنجان القهوة.
يتم غلي حبوب البن المحمصة المطحونة أو السليمة في درجة حرارة من (165 إلى 210) درجة مئوية، وقد طورت معظم الدول العربية في جميع أنحاء الشرق الأوسط أساليب فريدة لصنع القهوة وإعدادها. يعد الهيل “نوع من التوابل الهندية الأصل” أحد المكونات التي تستخدم بشكل شائع في إعداد القهوة العربية. وتوجد العديد من الأساليب المختلفة لتخمير القهوة العربية اعتمادا على تفضيل الشارب. بعض الطرق تحافظ على لون القهوة الفاتح، والذي يحتوي عادة على الهيل والقرنفل، في حين يفضل البعض القهوة الغامقة، فالقهوة العربية تميل في الغالب إلى مرارة الطعم، ولا يتم إضافة السكر لها. ويتم تقديم القهوة العربية التقليدية في أكواب صغيرة مزينة بنمط زخرفي، يعرف ثقافيًا باسم “الفنجان”، ويتم تقديمها خلال التجمعات العائلية أو عند استقبال الضيوف.
وبالتالي تتمثل خطوات إعداد القهوة العربية في الآتي:
1. غلي الماء في إناء مخصص للقهوة.
2. إضافة البن للماء المغلي “ثلاثة معالق بن لكل لتر مياه”.
3. تسوية البن في الماء المغلي لمدة تتراوح بين 10–15 دقيقة.
4. عدم تقليب القهوة بعد التسوية لكي يترسب البن في القاع.
5. صب القهوة في “الدلة” بعد تصفيتها.
6. إضافة الهيل للدلة “يفضل أن يضاف الهيل قبل تقديم القهوة بلحظات للحفاظ على النكهة”.
7. عدم الصب مباشرة ولكن يفضل الانتظار لمدة خمسة دقائق لكي يختمر الهيل بالبن.
8. صب القهوة المصفاة في فناجين باستخدام الدلة.

ARABIC COFFEE PRODUCTION STAGES

  • Phase I: Grain cultivation: The coffee bean is actually a seed that is grown and once matured, the coffee beans are harvested, processed, and then dried to use it for making coffee. Coffee seeds are sown in large groups in saplings, and coffee is often grown during the rainy season, so the soil remains wet while the roots become solid.
  • Phase II: Grain Harvesting: Depending on the varieties, it takes approximately 3 to 4 years for newly grown coffee plants to bear fruit. In most countries, the harvesting method is manual, obviously a difficult process, although, in places like Brazil where agriculture is relatively intensive and coffee fields are enormous, the process is performed automatically.
